Chicken recipe using Deeks breadcrumbs - Chicken Schnitzel with chunky avocado salsa

INGREDIENTS

  • 2 Chicken breats, flattened
  • 1 cup of Deeks breadcrumbs
  • 4 heaped tablespoons fresh parsley, finely chopped 
  • Salt & pepper
  • Olive oil to cook
  • 2 avocados, scooped out & diced
  • Juice of 1 lime
  • ¼ red onion, finely diced
  • 1 punnet cherry tomatoes, finely diced
  • 2 teaspoons fresh coriander, finely chopped
  • 2 beaten eggs

METHOD

  1. Combine Deeks breadcrumbs and parsley in a large mixing bowl.
  2. Place 1 chicken breast in the eggs. Once coated well, place in breadcrumb mixture. Repeat with other chicken breast.
  3. Heat olive oil in a large frypan on medium-high heat. When hot add chicken and cook for roughly 15 minutes. Ensure chicken is cooked through completely.
  4. Put together the Chunky Avocade Salsa while the chicken is cooking. Combine the avocado, onion, tomato and coriander coating with lime juice, set aside.
  5. Serve with chunky avocado salsa.
