Date and Walnut Stuffing


  • 1/4 cup (60ml) olive oil
  • 1 brown onion, finely chopped
  • 2 rashers of bacon, finely sliced
  • Half loaf of Deeks Date and Walnut bread coarsely torn
  • 1/2 cup (85g) fresh dates, pitted, chopped
  • 1/4 cup (30g) walnuts, coarsely chopped
  • 100 mls port
  • 2 tablespoons chopped sage
  • 2 tablespoons chopped parsley
  • 2 whole eggs

Preheat oven to 180°C.

  • Step 1: Heat 1 tablespoon of the oil in a frying pan over medium heat. Add diced onion and cook for 5 minutes without any colour or until onion softens.
  • Add the bacon and cook for a further 5 minutes then remove from heat.
  • Step 2: Cut / tear date and walnut bread into large pieces. Pour port over the top and leave to soak in.
  • Step 3: Transfer the onion/bacon mix to a bowl with date & walnut bread, add sage/ parsley and egg and stir to combine. Season with salt and pepper.
  • Step 4: Tear off a sheet of tin foil and lay it flat on the work surface. Place a sheet of baking paper on top of the foil.
  • Step 5: Spoon the mix out onto the paper and form a log shape
  • Step 6: Twist each ends of the roll to form a firm log shape
