Mango Cheese Cake


90g Deeks Gingerbread Men
160g Deeks Short Bread
275g Butter

500g Cream Cheese
87.5g Caster Sugar
10g Gelatine
Juice and Zest of 1 Lemon
Juice and Zest of 1 Orange
1 Mango

Melt 275g butter
Blend together Deeks Gingerbread Men and Deeks Short Bread into a crumb. Add the butter to the crumb and mix together.
Turn the mix into a lined spring loaded cake mould, press down firmly and refrigerate.
Dilute 10g gelatine with 125 mls hot water. Leave to stand.
Take the zest off the lemon and orange and then squeeze the juice of each.
Peel and remove the mango flesh from the stone.
Take half of the mango and add the squeezed juice and blend to a smooth puree.
Beat 500g cream cheese until soft, add sugar and beat until dissolved
Add the mango puree and gelatine to the cream cheese and mix together.
Pour mix into the cake mould on top of the biscuit crumb and evenly spread out. Refrigerate for 3-4 hours or until set.
Garnish with sliced mango cheek and a drizzle of mango coulis.
