When you commit to going grain free and/or paleo, you may notice that you start to feel amazing but miss some of your favourite foods that contain rice or corn! Well, here is a recipe that we love and you will too for its simplicity and taste!
Ingredients
This mix makes 20-22 balls.

2 cups quinoa flakes (boiled and drained)

1 cup Deeks bread crumbs (for the mix) + an additional cup for rolling

4-5 small mushrooms, diced

1 cup cheese (can be dairy free, vegan, etc.)

Salt and pepper

Oregano
Method

Prepare a bowl with 1 cup of Deeks breadcrumbs (ready for rolling).

Once you have allowed the boiled quinoa to cool, mix all ingredients together thoroughly. Add salt and pepper to your taste.

Take a teaspoon of mix and roll it into a ball and roll in the Deeks breadcrumbs before setting aside.

Repeat until all balls are made.

Heat oil in a small pan and lightly fry balls moving and turning continuously so they don’t burn.

Serve with your favourite mayonnaise or aioli.
